Caravelle Dishes Up the Pacific

Reflections is offering two menus — a ‘Hawaiian' menu that makes much of crab cakes and duck breast, and a more upscale ‘Eclectic' menu anchored by blackened tuna, wok-seared lobster and Szechwan beef skewers.

Also known as fusion food, Pacific Rim cuisine combines the ingredients and techniques of Asian and West Coast (USA) cuisines. The result? Something different and, when done well, exciting.

The Hawaiian menu's Kona Crab Cakes float on a bed of mango papaya, mint sauce and crisp lettuce, while the Marinated Duck Breast is set off by butternut squash, sweet potato risotto, apple compote and cinnamon infused duck jus. This menu costs US $36.

On the Eclectic menu, look out for the blackened tuna to come cubed alongside similarly cut watermelon, some roast pumpkin and wasabi cream. The Szechwan Beef Skewers feature marinated tenderloin, grilled green asparagus, coriander tomato tartar and crisp lettuce. This meal costs US $48.
